Hi. I’m Kendra Johnson. Eating together is important to my family, but is sometimes difficult because of the busy lives we lead . Freezer meals have allowed us to enjoy eating delicious home-cooked food without the hours of daily preparation and without the mountains of dishes that come with it.

Every other week, I will be taking orders for Freezer Meals. Prices will range from $15-20 and will feed a family of six. There will be a blog post listing what is available, when the orders are due, and when the meals will be ready for pickup.

Ok.  As  I get closer and closer to my due date, I'm moving slower and slower and it's important to me that I make good food for you, so to make sure I can keep up with the orders, I will only be taking orders for 40 meals this time.  I'll keep orders open either until that many have come in or until Friday, September 2nd.  Pregnant lady gotta do what pregnant lady gotta do (and that includes ice cream in the middle of the night sometimes.)  

Here's what's available this week:

1.  Teriyaki Chicken with Coconut Rice $16: Stir-fried chicken with homemade sweet teriyaki sauce served with Coconut Rice. 

2. Deluxe Pizza Stuffed Shells $18: Classic stuffed shells with the extra bonus flavors of deluxe pizza.. the marriage of two delicious Italian beauties.

3. Chicken Pillows $19:  A homemade roll with a creamy chicken and cheese filling and topped with gravy.

4. Perfect Beef Enchiladas $19:  A hearty pan of delicious and filling enchiladas made with red sauce and corn toritllas, by special request of my Hubby :)

5.  Breakfast Burritos $15:  Sausage, eggs, potatoes and cheese wrapped up in a flour tortilla.  Comes with 6 burritos.  Easy for a busy morning or, if you're lucky, a delicious brinner.  (Scrubs fans anyone?)

Here's what's available this week! Orders due August 19. ** ORDERS CLOSED! **

Every once in a while you just have to go back to what sounds good.  And what sounded good this week was a repeat of the first menu that I posted back in June.  So that's what we've got going now.  And this menu does include the famous French Dip sandwiches, so hopefully that sounds as good to you as it does to me.  A few of the prices have changes, and that is because the cost of groceries fluctuates and I can't always get ingredients for the same cost.  Sorry if that causes confusion!

Here's what is available this week:                                                                                                           1. Baked Chicken Alfredo, $17- Chicken chunks and penne pasta covered in a delicious homemade alfredo.  But it gets better.  It's Guiltless  Alfredo.  And I promise, you won't miss out on anything with this dish except for some fat and calories.  This is one of my favorite freezer meals.

2. French Dip, $19: Tender roast beef and cheese sandwiches served on French Rolls.  Sandwiches are individually wrapped in tinfoil to be heated in the oven before serving with the delicious homemade au jus.  Probably my most popular meal.

3. Meatballs and Rice, $16:   Grandma's recipe homemade meatballs served with a creamy gravy on top of fluffy rice.  Comfort food at it's finest.                                                                                                                                                                                                                                                        
4. Sweet Pork Burritos $17: Tender sweet pork, re-fried beans, cilantro-lime rice and cheese wrapped up in a flour tortilla and individually frozen.  Comes with 6 big burritos. These can be taken to work and re-heated in a microwave.

5. Pasta Fagole $16:  This is a copycat recipe of the famous soup served at Olive Garden.  I know, it's summer, but this soup is really good and I'm craving it.  It has Italian sausage, tomato-based broth, beans and vegetables. Did I mention it's really, really good?

Freezer Meals List! Orders due 8/5/16

School Starting makes for busy families!  Why not take a bit of the burden of cooking (and most of the cleaning)  off of yourself by adding a few freezer meals to the routine?  Here is what's available this week:

1.     Chicken pot pie- $17:  Tender chicken, carrots, onions, celery and peas in a flavorful gravy and topped with a flaky pie crust.  This is simple home-cooked comfort food that will please even your pickiest eaters.
2.     Sweet and Sour Pork $18: Why go grab takeout when you can prepare your own with minimal effort right at home?  Crispy fried pork with peppers, onions and pineapple and tangy sweet and sour sauce, served with fluffy white rice.
3.      Red Beans and Rice $16: Sounds simple, but this delicious Creole dish is bursting with flavor.  Red beans, sausage, onions, garlic and seasonings simmered with red beans.  To serve, put a scoop of rice in your bowl and scoop the beans right on top. 
4.      Taco Soup $16:  This hearty soup with ground beef, beans, onions and corn is easy to serve and is a definite family-pleaser.  Comes with a bag of corn chips.  Add your own cheese and sour cream.
5.     Lemon Pesto Artichoke Chicken Pasta $19- Wow, now that’s a mouthful! But a mouthful of delicious!   Rotini pasta with Chicken and Artichokes in a creamy lemon-pesto sauce.  Topped with Parmesan cheese. A fancy and  company-worthy meal.
