Hi. I’m Kendra Johnson. Eating together is important to my family, but is sometimes difficult because of the busy lives we lead . Freezer meals have allowed us to enjoy eating delicious home-cooked food without the hours of daily preparation and without the mountains of dishes that come with it.

Every other week, I will be taking orders for Freezer Meals. Prices will range from $15-20 and will feed a family of six. There will be a blog post listing what is available, when the orders are due, and when the meals will be ready for pickup.

New Freezer Meals List up! Orders due Monday 18th at 9:00 AM

Here's what's available this week:

1.  White Chicken UNchiladas-$21:  Creamy and cheesy chicken and rice ready to warm up in a pan and scoop up with crunchy tortilla chips. You can top with your own fresh ingredients (lettuce, tomatoes, olives and avocado) if you like.  I'ts good that way!

2.  Lemon Pesto Artichoke Chicken-Pasta $22: Wow, now that’s a mouthful! But a mouthful of delicious!   Rotini pasta with Chicken and Artichokes in a creamy lemon-pesto sauce. Topped with Parmesan cheese. A fancy and  company-worthy meal.



3. Cheap Korean Beef $19 -I thought about renaming this something more creative, but I decided not to because hey, why not call a spade a spade.  This meal is ground beef seasoned with ginger, garlic, brown sugar and soy sauce.  And it's good!

4. Sweet Potato Zuppa Toscana-$21: It's yummy, flavorful crock-pot (or instant pot) friendly soup!  I love the combination of the savory sausage and the sweet potatoes.  And I'd like to give a personal thanks to fall for making this soup possible.


5.  Red Beans and Rice $19: Sounds simple, but this delicious Creole dish is bursting with flavor.  Red beans, sausage, onions, garlic and seasonings simmered with red beans.  To serve, put a scoop of rice in your bowl and scoop the beans right on top.

New list! Orders Due Monday the 4th at 9:00 AM!!

Hello from Florida!  Our family vacation is winding down and I'm looking at reality and that means freezer meals! 

1. Baked Ravioli $21- Spinach and cheese manicotti layered with italian sausage, bechamel and marinara sauce and cheese.  Bechamel is fancy for white sauce.  I didn't know that so I'd like to thank the  Food Network for enlightening me.

2. Chicken and Sweet Potato Burritos $20- Six generous portions of shredded chicken, roasted sweet potatoes, black beans and cheese wrapped up in a flour tortilla.  Easy to take for lunch and re-heat in the microwave!

3.Chicken Cordon Bleu Casserole $22- all the classic flavors of the famous dish (chicken, ham and Swiss) layered with rice and topped with breadcrumbs.

4. Brown Sugar Meatloaf and Twice Baked Potatoes $22-  This freezer meal is hearty and comforting.  The meatloaf comes frozen uncooked and ready to bake in your oven.  The potatoes can be stuck in the oven while the meatloaf is finishing up.

5. Blue-Ribbon Chili $21- It's meaty.  It's tomatoey.  It's beaney.  This mild chili is a for-sure prize winner, and freezing it makes it even better because the flavors blend most deliciously.

New Freezer Meals List, Orders Due Monday the 13th

Hello! It's been a while.... Summer was awesome.  And fun.  And BUSY!  But now it's back to reality. Well, kindof. Our family vacation is at the end of the month so this list will be the only one in August.  Look for another the first week in September.

Also, bad news. I sat down with a calculator and did a little math, and I realized something: I need to bump up my prices. Meals still feed 6 generously, and they're still yummy and super convenient. But they're not so cheap. Here's what's on the menu this week:

1. Cilantro-Lime Chicken Tacos $22- What makes this meal special is the cilantro-lime pesto.  It's savory and flavorful (and delicious) but not spicy at all (if you have any left over, try mixing it with sour cream for a crazy good dip.)  This meal includes enough seasoned shredded chicken, corn tortillas, cheese and cilantro-lime pesto for 12 tacos.  

 2. Tater-Tot Casserole $20- Seasoned ground beef with a creamy sauce topped with crunchy tater tots and cheese.  I feel like I should add a Napoleon Dynamite joke here but I can't think of one.  It's yummy.
 3. Tuscan Pasta $21-Bow tie pasta with tender chicken chunks and sun-dried tomatoes covered in a creamy sauce. Comes frozen in a pan for you to reheat in your oven (and throw the pan away after, thus eliminating any dish washing responsibilities.)

4.  Sloppy Joes $17- Saucy and flavorful ground beef seasoned with onions and peppers.  Add your own buns (so they're nice and fresh) or use as a topping for baked potatoes for something a little different.

5. Pork & Sweet Potato Curry and rice $19-  pork, carrots, onions and sweet potatoes in a curry sauce.  No heat in this sauce, it's nice and mild.  To serve, put rice in a bowl and top with curry.

Freezer Meals List- Orders Due May 19!!

Here's what is available:

1. Homestyle Chicken pot pie- $18:  Tender chicken, carrots, onions, celery and peas in a flavorful gravy and topped with homemade biscuits.  Comfort food that will please even your pickiest eaters.

2. Teriyaki Chicken and Coconut Rice-$17: This Teriyaki chicken is so good!  It's got hints of orange along with the traditional ginger and soy sauce, and coconut rice is fragrant and delicious.  
 
3. Tamale Pie- $19: Ground beef and corn in a tomato-based sauce topped with green-chili-cheese cornbread.  

4. Lemon Artichoke Chicken Pasta $19- Wow, now that’s a mouthful! But a mouthful of delicious!   Rotini pasta with Chicken and Artichokes in a creamy lemon-pesto sauce. Topped with Parmesan cheese. A fancy and  company-worthy meal.

5.  Breakfast Burritos $16:  Sausage, eggs, potatoes and cheese wrapped up in a flour tortilla.  Comes with 6 burritos.  Easy for a busy morning or, if you're lucky, a delicious brinner.

New List! Orders are due Friday, May 5th

Here's what's for dinner next week:

1. Baked Manicotti $18- Spinach and 3 kinds of cheese-stuffed pasta.  It's delicious and beautiful.

2. Beef & Bean burritos $19- Six generous portions of seasoned shredded beef, re-fried beans and cheese wrapped up in a flour tortilla.  Easy to take for lunch and re-heat in the microwave! 

3.Chicken cheddar Ranch casserole $16- shredded chicken, cheddar cheese, hash brown potatoes and creamy ranch sauce topped with breadcrumbs.

4. Brown Sugar Meatloaf and Twice Baked Potatoes $19-  This freezer meal is hearty and comforting.  The meatloaf comes frozen and ready to bake in your oven and the potatoes can be stuck in the oven while the meatloaf is finishing up.

5.Dr. Pepper pulled Pork $17-  Barbecue sauce and shredded pork so tender and juicy it will melt in your mouth.  Put it in a hard roll, on a bun with some deli coleslaw, on top of a salad or in a wrap, you can't go wrong.

Freezer Meals list! Orders due 4/21 *DIFFERENT PICKUP DAY!!! WEDNESDAY INSTEAD OF THURSDAY!!*

Happy Spring! Here is what I'm making this week:

1. Tacos al Pastor $18- Tender Shredded Pork cooked in lime, chiles and fresh pineapple.   There is just a little bit of heat in the meat, not much, my dear husband doesn't like spice.  Comes with a dozen corn tortillas.  Optional toppings: fresh cilantro, pineapple tidbits, sliced avocado and crumbly cheese like cojito or queso fresco (but since you cant freeze those things, they're not included) 

 2. Tater-Tot Casserole $17- Seasoned ground beef with a creamy sauce topped with crunchy tater tots and cheese.  I feel like I should add a Napoleon Dynamite joke here but I can't think of one.  It's yummy. 

3. Tuscan Pasta $18-Bow tie pasta with tender chicken chunks and sun-dried tomatoes covered in a creamy sauce. Comes frozen in a pan for you to reheat in your oven (and throw the pan away after, thus eliminating any dish washing responsibilities.)

4.  Chicken & Bacon Melts $18-  Shredded chicken, bacon and cheese on a garlic-ciabatta bun.  Individually wrapped sandwiches to heat up toasty-warm in your oven.  This is a great meal when you've got 20 minutes to get dinner on the table.

5. Thai Peanut Chicken Lo Mein $17- Noodles, chicken and veggies stir fried in a flavorful sauce.  Its easy to put on the table and tastes great!

New list, Orders Due Friday, March 17





Here's what is available this week:                                                                                                         
1. Baked Chicken Alfredo, $18- Chicken chunks and penne pasta covered in a delicious homemade alfredo.  But it gets better.  It's Guiltless  Alfredo.  And I promise, you won't miss out on anything with this dish except for some fat and calories.  This is one of my favorite freezer meals.

2. French Dip, $19: Tender roast beef and cheese sandwiches served on French Rolls.  Sandwiches are individually wrapped in tinfoil to be heated in the oven before serving with the delicious homemade au jus.  Probably my most popular meal.

3. Meatballs and Rice, $17:   Grandma's recipe homemade meatballs served with a creamy gravy on top of fluffy rice. This is a meal that my entire family enjoys.  Comfort food at it's finest.                                                                                                                                                                                           
4. Sweet Pork Burritos $18: Tender sweet pork, re-fried beans, cilantro-lime rice and cheese wrapped up in a flour tortilla and individually frozen.  Comes with 6 big burritos. These can be taken to work and re-heated in a microwave.

5. Pasta Fagole $16:  This is a copycat recipe of the famous soup served at Olive Garden.  It has Italian sausage, tomato-based broth, beans and vegetables. Did I mention it's really, really good?

New Freezer Meal's List, Orders Due 2/24/16

1. Homestyle Chicken pot pie- $18:  Tender chicken, carrots, onions, celery and peas in a flavorful gravy and topped with homemade biscuits.  Comfort food that will please even your pickiest eaters.

2. Cheap Korean Beef and Rice $16- Ground Beef seasoned with soy sauce, garlic, ginger and brown sugar.  The ground beef makes it "cheap" but there's no skimping on flavor here!  To serve, place a scoop of rice on a plate and top with the meat mixture and finish with green onions.
 
3. Beef Fajita kit $19- Marinated steak strips with peppers and onions ready to thaw and fry up fresh in a pan in about 15 minutes or throw in a crock pot in the morning to cook slowly all day.  Comes with tortillas for serving.

New list up! Orders Due Thursday the 9th of February

Here's what's for dinner next week:

3.Chicken Broccoli Rice Hot Dish $16- Hey, did you guys know that "Hot dish" is another word for casserole?  I didn't.  But I like it so I'm totally using it.  Chicken, rice, broccoli and cheese combine for you to bake up yummily hot in a dish I provide for you to throw away after. Also, I like the word "yummily."  I apologize to any of my former English professors who may come across this. But it's funner to use creative words.


4. Brown Sugar Meatloaf and Twice Baked Potatoes $19-  This freezer meal is hearty and comforting.  The meatloaf comes frozen and ready to bake in your oven. (Its much more tender not pre-baked... Learned this from experience!) and the potatoes can be stuck in the oven while the meatloaf is finishing up.

New Freezer Meals List Up, Orders Due January 12

Here's what's available this week:

1. Slow Cooker Mongolian Beef and Rice $19- Delicious steak strips that will melt in your mouth after cooking in your slow cooker. So flavorful and yummy! Comes with rice.                                                   
2. Manicotti $18- Spinach and 3-cheese  manicotti with marinara. Warm and filling for cold winter nights!
3. Chicken Pillows $19:  A homemade roll with a creamy chicken and cheese filling and topped with gravy.

4. Perfect Beef Enchiladas $18:  A hearty pan of delicious and filling enchiladas made with red sauce and corn toritllas, by special request of my Hubby :)

5.  Chicken Noodle Soup $16: I don't think there's anyone I know who doesn't like chicken noodle soup, and this time of year makes it even better.
