Hi. I’m Kendra Johnson. Eating together is important to my family, but is sometimes difficult because of the busy lives we lead . Freezer meals have allowed us to enjoy eating delicious home-cooked food without the hours of daily preparation and without the mountains of dishes that come with it.
I would like to invite you to enjoy these same benefits by purchasing ready made freezer meals from me!
Every other week, I will be taking orders for Freezer Meals. Prices will range from $15-20 and will feed a family of six. There will be a blog post listing what is available, when the orders are due, and when the meals will be ready for pickup.

Feel free to e-mail me with any questions at johnson.kendra11@gmail.com

Summer Freezer Meals and New list!

Hello all!  Does summer vacation make anyone else feel like they can finally breathe again.  Aaaah, bliss. Because it's summer, and all my school-year running around isn't going to be happening, you're going to be hearing a lot more from me, and I've got some exciting things lined up!  For starters, how about a bi-weekly list that has more options to meet your family's summer mealtime needs.  In addition to traditional family favorites, Summer freezer meals will include a healthy option, a quick and kid-friendly lunch option (feeding the kids lunch... the only part of summer that stinks), a summer grill option and a dessert option that's perfect for potlucks and barbecues.  So without further ado, here is what is available this time around:

1. Squa-gana  $24:  not a typo. It's a lighter version of lasagna made with spaghetti squash, ground turkey, marinara and easier on the cheese to make this traditional comfort food a little less heavy on the belly, while still being delicious.

2.  Ham and Cheese pockets $16: Six individually wrapped dough pockets filled with ham and cheddar cheese, ready to be heated up in the microwave or traditional oven, easy-peasy lemon squeezy. There's no lemon in them though.  But they'd be really good with lemonade.

3. Coconut-Lime grilled Chicken $16:  Delicious chicken prepped and ready for you to grill fresh at home.  There will also be some marinade reserved to baste with if you so desire.

4. Pasta Fagiole $17:  This is a copycat of the famous Olive Garden soup. Its got Italian sausage, beans, pasta and vegetables in a tomato-based broth.  It's delicious and I love it in the summer with a fresh side salad and garlic bread.

5. Perfect Beef Enchiladas $23:  A hearty pan of delicious and filling enchiladas made with seasoned ground beef, cheese, olives, red sauce and corn tortillas.  Hubby's request :)

6.  Slow Cooker Mongolian Beef and Rice $23- Delicious steak strips that will melt in your mouth after cooking in your slow cooker or instant pot. So flavorful and yummy! Comes with rice.

7. Caramel Drizzle Pie $10:  This delicious dessert is served frozen.  It's got a graham cracker crust and creamy rich filling layered with sweet caramel and topped with toasted pecans and coconut.  It serves six, so if you're taking it to a potluck, order two!

All meals serve six.  Orders will be due Sunday the 2nd of June at 6:00 pm.  Pickup will be the 6th of June from 6-8 pm or by arrangement.  Payment is due at pickup on the 6th.  Venmo is preferred but I can take other methods too. 1. Pasta e Fagioli $17- A super yummy copycat recipe that’s wonderfully hearty and comforting, except it tastes better than the restaurant-version! Mine has a little extra kick.
2. Stuffed meatloaf and twice baked potatoes $22- A delicious meatloaf with an oozing melted cheese filling, topped with a yummy sweet tangy sauce. Paired with twice baked potatoes, topped with cheese and bacon crumbles.
3. Chicken stuffing casserole $17- This is one of my few go to casseroles. My girls love it, my husband requests that we make enough to have leftovers. Exactly how it sounds chicken, stuffing, ditalini mixed with a creamy sauce.
4. Mexican Pie $19- It’s everything you wouldn’t put together, mixed perfectly into something you wouldn’t expect. It looks like a chicken pot pie on the outside. Besides chicken inside, you will find, salsa, corn, kidney beans and a creamy sauce. It’s so yummy
5. Sweet Pork Sandwiches $25- Slow cooker pulled pork sandwiches with a delicious sweet sauce, already prepped and individually frozen for your convenience. We love to pair these sandwiches with chips and dip. You buy your own bag of ruffles or lays, but I will include my favorite ranch dip. It will stay fresh in the fridge for 2 weeks.
6. Slow cooker cilantro chicken  $16- This is a gallon freezer baggie already prepped and ready to throw in your crockpot. Just slow cook on low for 6 hours or high for 3-4 hours. Then shred the chicken. We love this on nachos, tacos, burritos or serve it up in a rice bowl topped with cheese, guacamole and sour cream. Endless possibilities with this Cilantro Lime Chicken
7. Lemon Freeze Dessert (to die for) $5 for 5x5 pan $10 for 9x13-  A fluffy lemon delight on a graham cracker crust. This will definitely be one of your new favorites and possibly something you’ve never tasted before!
